You probably already know that I’m a big fan of leafy green vegetables.
These nutritional powerhouses are packed with goodness — and my mission is to make these heavy-hitters delicious.
One of my favourite summer sauces is chimichurri sauce. This vibrant little sauce will make you see boring old parsley in a whole new light.
What Is Chimichurri Sauce?
Chimichurri is an Argentinian sauce traditionally paired with grilled steak, but it definitely doesn’t have to stop there.
Made with fresh herbs, garlic, olive oil and a little acidity, chimichurri is one of those simple sauces that can completely transform a meal.
And because parsley is the star of the show, it’s also a delicious way to get more leafy greens onto your plate.
7 Delicious Ways to Use Chimichurri
Think beyond steak! Try chimichurri:
- 🌿 Over grilled vegetables (hello, giant zucchini!)
- 🌿 On shrimp or chicken skewers
- 🌿 Stirred into pasta or chickpea salad
- 🌿 As an elegant dipping sauce for fondue
- 🌿 On grilled sandwiches, cheese melts or burgers
- 🌿 As part of a grain bowl
- 🌿 I’ve even layered it into lasagna
It comes together in minutes and keeps beautifully in the fridge for days.
My Twist on Traditional Chimichurri
My personal twist? A little chopped anchovy for extra savoury goodness.
I also like mine with a serious kick, so I’m generous with the chili flakes.

Chimichurri Sauce
Ingredients
- 1 cup of chopped parsley
- 3 cloves garlic chopped fine
- 1 tbsp dried oregano
- 1/3 cup of olive oil
- 2 tbsp of red wine vinegar
- Juice of ½ a lemon or more to taste
- 2 tsp lemon zest
- 1-2 anchovies finely chopped
- Pinch of red pepper flakes
- Salt and pepper to taste
Instructions
- Finely chop parsley, mince the garlic and anchovies and zest the lemon.
- Combine all of the ingredients and mix well.
- Allow the sauce to rest for at least ½ an hour to allow the flavours to blend.
Notes
Note: If using a food processor, use short pulses and don’t over blend . Chimichurri should be slightly chunky and spoonable not smooth like pesto.
